FOOD AND BEVERAGE MANAGER REQUIRED FOR BUSY GAME LODGE IN LIMPOPO - LIVE IN (2 Bedroom, 1 Bathroom Garden Flat)

Requirements:- Matric Cerfificate, Tertiary Education in Hotel Management and F&B Services Management course. Previous Lodge & management experience and past experience in dealing with International Tourists is essential. In-depth knowledge of stock control, good communication skills in order to be able to communicate with guests, staff and management is vital. Of great importance is that the individuals management style should bring out the best of the team at all times. A valid drivers license is essential as well as a broad knowledge of food trends, bar services and sound hygiene practices.

SCOPE AND PURPOSE OF JOB

To manage the full Food & Beverage Services, ensuring strict stock control in the bars and the kitchen, offering guests superior service and producing fresh, flavorsome meals prepared in a hygienic environment whilst ensuring minimal stock loss due to over catering, over purchasing or theft.

The employee is required to facilitate everything involved in ensuring the smooth running of the department, staff rosters, ensuring discipline is maintained, all equipment placed in their care is well maintained, cleaned and in sound working order. Maintaining good relationships between colleagues and subordinates, as well as being a great ambassador for the Company.

The employee will be responsible for the set-up of conferences, events, sundowner stops, bush dinners and breakfasts held by the lodge and will be involved in the arrangements thereof.

The employee will be required to work within a strict financial budget ensuring the food cost per bed night is maintained and all other F&B requirements for the department are within budget. Guest feedback with a target of 95% plays a critical role in the assessment of the department and employee.

The employee is required to assist with general F&B requirements such as updating wine lists with newer trending wines, when required, as well as sourcing and liaising with local suppliers and farmers.

The employee will need to be able to work independently, self-motivated, hands-on service oriented and ensuring accuracy is achieved in everything that is done.

The employee will be required to, from time to time, be present at early morning coffee service to ensure standards are being maintained, host dinner several times a month, staff gate pick-ups and anything else deemed necessary as part of Management team responsibilities.

Being an active team member, adding value to the day to day running of lodge is of vital importance.
